Pumpkin broth - Potaž od bundeve
Čorba or Potaž is a very special kind of broth in Balkan kitchen. It belongs to so called "poor people's meal" because of its ingredients that are easy to get. Anyway, this doesn't mean that čorba or potaž is less good of all the expensive dishes. It comes from the culinary tradition of the former Yugoslavia, which has as the base the broth of veal and vegetables. It is served as the 1st course after the appetizers. Next to veal broth there are a lot of broths made only with vegetables. Usually they are made of onions, carrots, and potatoes, but is common to add also mushrooms, broccoli, pumpkin...
One of my favorite vegetable broths is pumpkin broth or potaž od bundeve as it's called on Balkan.
To make Pumpkin broth it's necessary:
-1 leek or onion
-2 carrots
-350g pumpkin
-2 potatoes
-water in necessary quantity
-a pinch of salt
-a sprinkle of black pepper
-min 50g neutral cream or sour cream
-a bit of oil
-a few drops of lemon if you want
Preparation:
In a deeper pan fry a little bit leek or onion, add carrots, potatoes and pumpkin cut into cubes. Pour water, season with salt and pepper and leave it on a small fire to cook. When the vegetables are ready smash it with a stick blender until it becomes creamy. Finally, add a little bit of neutral or sour cream and a few drops of lemon. Serve the vegetable broth while it's still warm. Enjoy!!
Potaž od bundeve
Ja lično obožavam čorbe i potaže bilo da su pravljeni sa mesom ili povrćem... Dragi moji, ovo je idealno doba za uživanje u ovim specijalitetima, koji ne samo što su zdravi, već ih možete jesti bez bojazni da će vam ugroziti idealnu liniju. Zar ima išta bolje od toga? ;)

Za potaž od bundeve potrebno je:
-1 praziluk ili luk
-2 šargarepe
-2 krompira
-350g bundeve
-so i biber po ukusu
-vode po potrebi
-malo ulja
-min 50g neutralne ili kisele pavlake
-limuna po ukusu
Priprema:
U dubljoj šerpi malo propržiti praziluk, dodati šargarepu, krompir i bundevu isečenu na kocke. Sipati vodu, začiniti po ukusu i ostaviti na tihoj vatri da se ukrčka tj. da se povrće skuva. Kad je povrće spremno izmiksati ga uz pomoć štapnog miksera dok se ne postane kremasto. Na kraju dodati neutralnu pavlaku i ostaviti još par minuta da se ukuva. Služiti toplo. Prijatno!!
