Carrot soup with sweet corn- Potaž od šargarepe sa mladim kukuruzom


Autumn is the perfect season to enjoy eating hot soups and meals as much as possible. In my family it's common to prepare various soups using all kinds of vegetables...but for sure after the pumpkin soup this is the next one I adore making. A few months ago I've tried to make a new kind of soup putting together two of my favorite ingredients, and this was the result. It's so rich, full of vitamins and at the same time so easy to prepare. What more do I have to say to convince you to prepare this comfort meal right away? Nothing, ok then... Let's start cooking :)

Ingredients:

-3 carrots

-2 potatoes

-1 onion

-2 sweet corns on a cob, or a can of sweet corn (250g)

-a pinch of salt

-a bit of black pepper

-a bit of olive oil

-water approximately 1l or less (depending of how much dense you prefer your soup)

Preparation:

First peal the onion and cut it in small pieces, let it fry a bit in a deep pan with a drizzle of olive oil. Cut the carrots and potatoes in small pieces, add them to the onion, then pour the water and let it cook until the veggies are completely done. At this point add salt and pepper, then sweet corn (I've used the one that is already cooked, but if you use the fresh ones first boil them and remove from the cob. Continue cooking on a small fire for about 5 to 10 minutes and in the end blend everything with an immersion blender until it's nice and smooth. Serve while it's still warm with additional sweet corn and a drizzle of olive oil. Enjoy!

 

Jesen je idealno doba godine bogato raznim povrćem, idealnim za domaće supice i čorbice. Slažete li se? U mojoj porodici se spremaju rado i veoma često, i daju onaj pravi osećaj tzv. komfort hrane. Pored moje omiljene čorbice ili potaža od bundeve, sledeći po redu je potaž od šargarepe sa kukuruzom šećercom koji sam nedavno osmislila...obiluje vitaminima, a u isto vreme se lako pravi. :)

Potrebni sastojci:

-3 šargarepe

-2 veća krompira

-1 luk ili vlašac

-2 klipa kukuruza šećerca ili 250g zamrznutog kukuruza

-prstohvat soli

-bibera po ukusu

-malo maslinovog ulja

-vode po potrebi (oko 1l ili manje u zavisnosti da li volite ređi ili gušći potaž)

-može se dodati i malo neutralne pavlake (nije neophodno)

Priprema:

Iseckati luk što sitnije i propržiti ga u dubljoj šerpi na malo maslinovog ulja. Zatim iseći šargarepu i krompir na kockice i dodati u šerpu sa lukom, zaliti sve vodom i ostaviti da se kuva. Kad je povrće potpuno skuvano posoliti i pobiberiti po ukusu i dodati kukuruz, pa sipati malo neutralne pavlake po želji. Na kraju sve izmiksati štapnim mikserom i služiti odmah. Prijatno!
