Pasta alla Bolognese - Špagete Bolonjeze
It is well known that the Italian food is one of the best in the world, next to the French cuisine. Pasta is prepared in various ways in Balkan, but the most famous Italian pasta dish is Spaghetti al ragù, or how we like to call them Spaghetti alla Bolognese. Here is the truth: if you go to Italy and try to order a pasta dish with "bolognese" sauce it won't be 100% correct, because in Italy that sauce is called ragù alla Bolognese, and the suitable pasta for this sauce is tagliatelle, not spaghetti. Even dough, it seams that everybody has heard of this tomato sauce with minced meat flavored with fresh basil. But just in case you're a new cook, here is the recipe of this wonderful tomato sauce. ;)
Ingredients for Ragù sauce:
-400g of pasta
-1 onion
-1 celery
-2 carrots
-a bit of fresh basil
-500g of minced beef
-3 ripe tomatoes
-1 cup of tomato pure
-a bit of white wine
-parmesan cheese
-salt and pepper
-a drizzle of olive oil
Preparation:
Cut the onion, the celery and carrots in small pieces and fry it on a drizzle of olive oil on a medium heat. Add salt and pepper as you wish, fresh basil, a splash of wine and leave it a bit on stove. Add the beef into the pot, chopped tomatoes, tomato pure and cook it until it's done.
Put the pasta into boiling water with a bit of sea salt and cook it "al dente" or a bit more if you prefer. Drain the pasta, put on plate and cover with rich ragù sauce. Sprinkle with parmesan cheese and add a bit more of fresh basil on top. Enjoy!
Dobro znamo da je italijanska kuhinja jedna od najpoznatijih i najcenjenijih kuhinja u svetu, pored francuske kuhinje. Na Balkanu se spremaju razna jela sa pastom, ali najčuveniji italijanski specijalitet je Pasta al ragu ili kako je poznatija kod nas Špagete sa Bolonjez sosom.
Zanimljivost je da se ovo jelo u Italiji zove Pasta al ragu, umesto Špagete Bolonjeze, ne služi se sa špagetama već taljatelama (bolje upijaju sos) i nema nikakve veze sa Bolonjom, već potiče iz Imole. Nakon male digresije, ako neko ne zna kako se pravi ovaj specijalitet neka pažljivo čita recept ispod. :)
Sastojci:
-400g testenine ( najbolje taljatele)
-1 glavica luka
-1 celer
-2 šargarepe
-malo svežeg bosiljka
-malo belog vina
-3 veća zrela paradajza
-1 šoljica paradajz pelata
-so, biber po ukusu
-malo ulja
-parmezana po želji
Priprema:
Luk, celer i šargarepu sitno iseckati ili samljeti u secku, pa staviti da se blago proprže na malo ulja u šerpi. Posoliti i pobiberiti po ukusu, dodati bosiljak i malo vina, ostaviti da vino ispari na laganoj vatri.
Zatim dodati mleveno meso, sitno iseckan paradajz i paradajz pelat, kuvati dok se sos lepo ne ukrčka. Obariti i procediti testeninu, sipati u tanjir, pa preliti sa dosta sosa. Od gore narendati parmezan i dodati još bosiljka po ukusu. Prijatno!
