My kind of salad - Moja omiljena salata
I must confess that sometimes I prefer to eat nice and rich salads instead of meat. Of course, not any of them can replace protein in my diet. That's why it has to have all kind of different flavors, colors and vitamins. The salad of which I'm talking about consists of roasted red & yellow peppers (full of vitamin C, A beta-carotene and also lycopene, which is an antioxidant preventing so many diseases), roasted eggplant, both marinated in olive oil, vinegar, garlic and parsley.
What I love about this salad it's the Mediterranean flavors well combined in one unique taste. It is always present during parties in my family, because it goes well with everything - meat, potatoes, fish, rice, you name it. It's an ideal meal for vegetarians, too, well served next to a toasted bread and some feta cheese: then you've got the whole meal in a plate.
The strange fact is that it doesn't have an official name in Balkan: it's always presented describing the ingredients in it... Since I live in Italy I had to create a simple name when serving it, and I've decided to call it "My kind of salad". Original, don't you think? :)
Here it is the recipe for one of the best salads in my kitchen:
-2 red peppers
-2 yellow peppers
-2 eggplants
-a spoon of vinegar
-a bit of olive oil
-3 cloves of garlic
-parsley as much as you want
-a tea spoon of salt
Preparation:
Wash peppers and eggplant thoroughly and bake them in a preheated oven at 200 degrees.
Let it cool down in a bowl: when they are almost cooled, peel them and cut into strips. Add 2 or 3 cloves of garlic, olive oil, salt, vinegar, and optionally finely chopped parsley leaves.
Mix well all the ingredients, then put in the fridge for at least half an hour.
You can serve it next to a piece of bread, and some feta cheese -as a lighter option, or with the steak or potatoes as a side dish. Enjoy!
Moram da priznam da ponekad više volim da pojedem lepu, svežu salatu umesto mesa.
Naravno, ne može bilo koja salata da zameni meso u mojoj ishrani. Zato ona mora biti bogata različitim ukusima, bojama i da obiluje vitaminima.
Ono što je super je što u svom sastavu ima pečenu crvenu i žutu papriku (puna vitamina C, A beta-karotena i ima likopen u svom sastavu tj. antioksidanse koji sprečavju mnoge bolesti) pečeni plavi patlidžan, koji su marinirani u maslinovom ulju, sirćetu, i na kraju obavezni beli luk i peršun koji daju posebnu aromu. Ova salata je idealan obrok za vegetarijance, a ako je poslužimo još uz tost hleb i parčad feta sira imamo ceo obrok na tanjiru. Čudno je da ova salata nema zvanično ime na Balkanu, već se predstavlja opisujući sastojke u njoj ... Pošto živim u Italiji morala sam da izmislim jednostavno ime dok je služim gostima, pa sam odlučila da je nazovem Moja omiljena salatica, i svima se dopalo. :) Evo šta je potrebno za ovu salatu: -2 crvene paprike -2 žute paprike -2 patlidžana -1 kašika sirćeta - malo maslinovog ulja -3 čena belog luka -peršuna koliko želite
-soli po ukusu Priprema: Papriku i plavi patlidžan oprati i peći u zagrejanoj rerni na 200 stepeni dok ne pocrne. Ostaviti da se ohlade u činiji, pa nakon toga oljuštite povrće i isecite na trake. Dodati 2,3 čena belog luka, maslinovo ulje, so, sirće, i sitno seckanog peršuna. Dobro promešati sve sastojke, a zatim staviti u frižider najmanje na pola sata. Uživajte!
