Mushroom soup - Potaž od pečuraka


ČORBA is a very special kind of a soup in Balkan kitchen. It belongs to so called "poor people's meal" because of its ingredient, that are easy to get. Anyway, this doesn't mean that Čorba, or in this case Potaž is less good of all the expensive dishes. It comes down from the ancient culinary tradition, which had as the base some vegetables or a piece of meat. It was served as the 1st course, soon after the appetizers.

What I love about this meal is the fact it's healthy, that can be prepared with any vegetable you want (or have in your house at the moment), and also that it's very nutritive.

This one in particular has mushrooms as the main protagonist, as you can see.

So here is how to make one healthy, creamy lunch :)

It's necessary:

- 3 carrots

- 2 leeks

- 2 small potatoes

- about 300 g of mushrooms

- a bit of pepper

- 100 ml of sour or neutral cream

- a bit of chopped parsley

- some olive oil

- a bit of salt

Preparation:

Cut the leeks and carrots into small cubes, then fry it a bit with the olive oil. After a few minutes add salt and black pepper and potatoes cut in small pieces. Pour water and let them cook for a while. Finally, add chopped mushrooms and cream. Remove from the heat after 15 minutes, and carefully blend all the ingredients using a blender. Serve it while it's still hot with a spoon of sour cream and a sprinkle of pepper. Enjoy!

 

Idealan topli obrok dok traje zima je topla čorbica ili potaž od povrća. Evo jednog jednostavnog recepta, sa pečurkicama i kiselom pavlakom, spreman za tren oka.

Potrebni sastojci:

- 3 šargarepe - 2 struka praziluka - 300 g pečuraka - po ukusu suvi biljni začin - po ukusu bibera - 100 ml neutralne pavlake - po želji peršuna - malo maslinovog ulja

Priprema:

Praziluk i šargarepu iseći na sitne kockice, pa prodinstati na ulju. Zatim dodati suvi biljni začin, biber i peršun, krompir isečen na kockice i doliti vode po potrebi, ja sam stavila više od pola litre.

Kada se lepo ukrčka povrće, dodati sitno seckane pečurke i neutralnu pavlaku.

Skinuti sa vatre nakon 15-ak minuta i sve pažljivo izmiksati štapnim mikserom.

Služiti toplo uz neutralnu ili kiselu pavlaku. Prijatno!
