Gibanica, cheese swirl pie - Savijača sa sirom
GIBANICA or BUREK is a traditional pastry dish popular all over the Balkans. Usually women prepare also the Phyllo Dough in their homes, but since it takes a lot of time to make I prefer to buy it in a store.
So, this recipe is traditional in Balkan and I can say that it's an unique dish too. Its origin comes from the verb gibati, meaning "to fold; sway, swing, rock". Gibanica was mentioned in Serbian dictionary of 1818 written by our famous linguist Vuk Stefanović Karadžić.
When I prepare Gibanica or Burek in Italy all of our friends remain amazed by its form and also with its great taste! It takes a bit of time and a bit of practice to make a perfect Gibanica, but trust me it's worth of trying. :)
I remember when I was little, me and my sister enjoyed watching our grandma while she's making the pie. It was a true magic happening just in front our eyes, and it was impossible to realize how she's doing that. I'm very proud now because I am able to make it by myself and show other people around me the trick of swirling the Phyllo Dough.
In this case I'm glad to share this recipe with you, dear friends :)
Here is what you need to prepare this tasty cheese pie:
- 400g of feta cheese - 1 package of Phyllo Dough - 3 eggs - 1 Greek yogurt - a pinch of salt - a bit of mineral water
- sunflower oil - sesame seeds (not necessary )
- a bit of mineral water
Preparation:
First smash feta cheese with the fork, then add eggs, yogurt and a pinch of salt. Mix all well.
Take one piece of Phyllo Dough, put a small amount of mixture on it and spread it well to every corner. Roll the dough into a long filled "tube", then roll it around again to make a spiral. Put the spiral in the center of the tray. You should repeat the same action until you finish all the Phyllo Dough.
Put the tray in the preheated oven on 250C and leave it until it's crispy and golden. Serve while it is still hot with yogurt or some salsa that you prefer. The best combination is with Ajvar (salsa made of peppers and eggplant).
Danas želim da podelim sa vama jedan tradicionalan recept iz Balkanske kuhinje svima dobro poznat kao Gibanica/Burek ili Savijača sa sirom. Ok, svi je rado jedemo, ali da li svi poznajemo način kako se ovaj specijalitet sprema?
Iskreno govoreći pre nego što sam počela da pišem blog nisam ni pomišljala da postavljam ovaj recept, jer sam pretpostavljala da je svako treći zna napraviti. Međutim, kad su mnogi počeli da se raspituju za recept shavtila sam da je zaista moguće da se nikad do sad nisu okušali u pravljenju gibanice na ovaj način, pa sam promenila mišljenje i odlučila da ipak objavim recept.
Zbog toga sa vama delim kako ja spremam savijaču, kako me je naučila moja divna baka. :)
Još ću napomenuti da je često pravim od gotovih kora, jer nemam uvek vremena za razvačenje kora...ali ukus je podjednako dobar. ;)
Za savijaču sa sirom potrebno je:
- 400g feta sira (može bilo koji si, najbolje sitni sir- pošto ga ovde nema koristim fetu)
- 3 jajeta
- 200ml jogurta ili pola pavlake
- suncokretovog ulja po potrebi
- malo soli
- po želji susama (nije neophodno)
- malo kisele vode
Priprema:
Viljuškom isitniti feta sir, pa sipati u činiju i dodati jogurt. Zatim razbiti jaja, posoliti po ukusu i dodati malo suncokretovog ulja. Sve lepo umutiti i ostaviti sa strane.
Uzeti prvu koru, premazati je uljem pa sipati od prilike 2 kašike fila, lepo rasporediti ka svim uglovima. Urolati koru, pa je zatim oblikovati u spiralu i postaviti u sredinu tepsije koju smo predhodno podmazali uljem. Isti postupak ponoviti sa ostalim korama, tamo gde se završila prva nastaviti drugu i tako dok se ne popuni tepsija.
Na kraju premazati sve maslinovim uljem, malo poprskati kiselom vodom.
Možete posuti semenke po želji, nije neophodno.
Peći u predhodno zagrejanoj rerni na 250C oko pola sata tj. dok ne bude pečena sa svih strana.
