Zucchini and carrot fritters - Pljeskavice od tikvica i šargarepe
Hello everyone! It's been a while since I've posted the last recipe, I know. But it's finally summer, and I'm traveling a looot with my husband.
We've been in Serbia, for a couple of weeks to spend some time with my family and celebrate my 32nd B-day! :)) I'll post some photos on my Instagram, and the recipe of the B-day cake will be here very soon, I promise!
Today I want to dedicate this space to a recipe of some wonderful and easy to prepare vegetable burgers :)
If you make it in the oven it's even healthier option, although I prefer to fry them, because they get golden and crispy. Of course, this dish is not meant just to vegetarians, but also can be a great idea to substitute meat in a burger once in a while. I bet you agree that we girls must keep attention on our diet to feel good in a bathing suit.
Here is how to enjoy them guiltless :)
Ingredients:
- 2 medium size zucchini
- 3 carrots
- a bit of black pepper
- 1 egg
- 1 teaspoon of salt
- 3 or 4 spoons of corn flour * I always put 3 spoons, if necessary I add more
- sunflower oil
Preparation:
Start with grating the vegetables. Add the grated zucchini and carrots to a cloth or thin kitchen towel in a colander over your kitchen sink. Sprinkle with the 1 teaspoon of salt and leave it to drain for 10 minutes.
After that, squeeze as much liquid out of vegetable as possible. This is a crucial step to not making your fritters mushy.
Add all the other ingredients to a bowl and mix them in, until combined.
Form fritters, then slightly flatten them on a baking sheet with your fingers.
Heat the oil in a pan over high heat, then add the fritters, leaving some space between each, and fry them on each side until they become golden brown.
In the end, place them on a kitchen paper to absorb the grease.
Serve them with yogurt salad or any other you prefer.
Pozdrav svima! Znam da je proslo dosta vremena otkad sam objavila poslednji post. Ali, napokon je ljeto i putujem često sa mužem u poslednje vreme. U Srbiji smo bili nekoliko nedelja, proveli smo divno vreme sa mojom porodicom i proslavili moj 32. rođendan!! :)) Postaviću neke fotografije na mom Instagramu, a recept za rođendansku tortu će biti postavljen ovde uskoro, obećavam! Danas ću objaviti recept za ove sjajne pljeskavice od povrća, tako lagani, a jako ukusni :) Zdravija opcija je naravno da ih ispečete u rerni, mada ih ja uglavnom pržim, jer na taj način postanu hrskavije. Naravno, ovo jelo nije namenjeno samo vegetarijancima, već takođe može biti odlična zamena za meso.
Evo kako to učiniti i uživati u njima bez krivice :) Sastojci: - 2 srednje tikvice - 3 šargarepe - malo crnog bibera - 1 jaje - 1 kašičica soli - 3,4 kašike kukuruznog brašna * Uvek stavljam 3 kašike, a zatim, ako je potrebno, dodajem još po potrebi - suncokretovo ulje Priprema: Počnite sa rendanjem povrća. Stavite narendane tikvice i šargarepu u čistu krpu, pospite 1 kašičicom soli i ostaviti iznad sudopere oko 10 minuta. Posle toga istisnite što više tečnosti od povrća. Ovo je presudan korak da vaše pljeskavice od povrća ne budu gnjecave. Dodajte ostale sastojke i sve lepo sjedinite. Oblikujete pljeskavice pa ih malo pritisnite prstima i poređajte na papir za pečenje. Zagrejte dobro ulje, zatim stavljajte pljeskavice,ostavljajući malo prostora između svake i pržite ih sa svake strane dok ne dobiju zlatnu boju. Na kraju ih stavite na kuhinjski papir kako bi se apsorbovala suvišna masnoća. Poslužite ih sa jogurt salatom ili salatom koju preferirate.
