Crescent rolls - Kupus kifle


One fact that you for sure don't know about Balkan is that the most of women are excellent bakers. This is why because they start baking very young, first watching their grandmother and soon after making their first bread.

I wasn't aware of this until one day my mom has told me how she has made 1st bread when she was only 7 years old. My granny couldn't stay and help her because she was working in fields since early morning. From that moment as she made this bread my mom has learned a lots of skills and has become excellent cook.

I've followed her steps, watching her while she was baking and I've become very curious to try it someday. I wasn't 7 like she was, but I've made my first pastry at the age of 12. I was helping my mom to make salty pretzels for the school celebration. I still remember how soft and crunchy they were!!

I'm sure that she has passed me the love for baking, and ever since I've enjoyed baking so much.

Here is one of very famous and I can say traditional recipes: crescent rolls in Balkan called Kupus kifle.

Usually they are filled with cheese, or can be empty. But in this case I made also pizza flavor, but adding bacon instead of ham.

If you want to know how to make them, read here the ingredients:

- 1 kg of white flour

- 3 dl of warm milk

- 2 dl of warm water

- 200g of margarine

- 150 g of bacon

- a bit of ketchup

- 150 g of cheese

- a pinch of salt

- 1 fresh yeast

- 3 eggs

- a bit of sesame

Preparation:

Put warm milk in a bowl add sugar and fresh yeast. Wait 10 minutes for the yeast to rise.

After that, add white flour in a mixing bowl and all the other ingredients. Start mixing them with a spatula and finish kneading the dough with your hands. It can't be sticky, but it has to have a nice solid consistency. Cover it with a cloth and leave for an hour to double the size.

Prepare the filling: First mix margarine with the yolks and salt. Also prepare grated cheese with some dry meat and set it aside.

After 30 minutes, divide the dough into 2 pieces. Stretch each piece into a rectangle form using the rolling pin, that should be about 3mm thick. Cover the whole surface of the dough with the margarine and then sprinkle with cheese, ham/bacon and ketchup.

Roll the dough into a cylinder and squeeze a bit on the edges.

Using a pizza cutter divide the cylinder into triangles about 2cm wide. Put them on a baking sheet in a pan and leave for ten minutes to rise. Repeat the same steps with other piece of dough.

Coat the triangles with egg whites and sprinkle with sesame seeds if you want.

Bake in a preheated oven on 250 degrees until they get really golden and crispy.

After they're done let them to cool down for 15 min, and then you can enjoy in the rich flavors and crunchy crust.

Već duže vreme obećavam mužu kako ću konačno napraviti te čuvene Kupus kifle...znajući da mi je za njih potrebno praktično pola dana, ako računam ceo postupak sve do gotovog proizvoda. ;)

Lakše mi je da smućkam proju, gibanicu na brzinu ili pak uštipke. Mada obećanje je obećanje, tako da evo ih konačno na mojoj trpezi, Kupus kifle i to u dve varijante: klasične sa filom od sira i moja varijanta pica kifli sa pikant slaninicom- ja ne bih bila ja ako nešto ne bih izmenila.

Od ove mere ispadnu oko 40ak kifli, mada možete uvek prepoloviti meru ako vas je manje.

Evo recepta za fantastične kupus kifle:

- 1 kg brašna

- 3 dl mleka

- 2 dl vode

- 40g svežeg kvasca

- 2 kašike šećera

- 2 dl ulja

- 1 kašika soli

- 200g margarina

- 3 žumanca

- 200g sira

- 200g pikant slanine

- 2 belanca

- susama po želji

- origana po želji

Priprema:

U malo toplog mleka staviti šećer pa rastopiti kvasac. Ostaviti 10ak minuta da nadodje. U posudu za mešanje dodati brašno i sve ostale sastojke, pa na kraju nadošli kvasac i sve lepo promešati dok se ne umesi glatko testo. Prekriti krpom i ostaviti oko 2h da se udvostruči.

Za fil:

Umutiti žumanca sa margarinom, posoliti po ukusu. Dodati sir i sve sjediniti u ujednačen fil.

Testo podeliti na dva dela, pa svaki deo rastanjiti oklagijom u pravougaonik debljine 3mm.

Preko prvog razvučenog dela premazati polovinu fila i urolati ga. Iseći ga uz pomoć tacne za kafu na trouglove širine oko 2cm.

Drugi deo premazati ostatkom fila, staviti slaninu, malo origana i kečap, pa ga pažljivo urolati. Iseći na trouglove po istom postupku.

Slagati kupus kifle u pleh postavljen papirom za pečenje. Premazati kifle umućenim belancetom, posuti susamom po želji pa peći u predhodno zagrejanoj reni na oko 250C dok ne budu dobro pečene sa svih strana.

Nakon pečenja ostaviti kifle sa strane da se prohlade, pa tek onda uživati u savršenom ukusu. Prijatno!
